Quinoa and carrot green soup




1/2 onion
2 carrots
bunch of carrot greens




7-10 okra
3/4 c quinoa
4 c chicken  or veggie stock
1/4 c capers
2-3 Kale leaves

Saute onion and carrots in olive oil.  Add stock, carrot greens, okra, quinoa, and capers to pot.  Cut up kale in strips and put in soup.  Boil for 20-25 minutes until quinoa is tender.
